Potato Croquettes

Assalamu’alaikum..
It has been a long time since I post anything in my blog. After the crazy hectic months I’ve had, now I miss hecticness in my kitchen and also I miss to post something in this blog. Actually I still don’t have enough leisure time to try new recipe. I can only cook simple menus lately. But fortunately I have several unposted content saved in my note and my choice fell on this ‘Potato Croquettes Recipe'(it called Kroket Kentang in Indonesia). I don’t even remember the last time I cooked this snack, LOL.

Potato Croquettes is side dish made from mashed potatoes. I usually mix the mashed potatoes and carrots to make this snack. You can mix with another topping like chicken, corned beef, cheese, etc. I fry the boiled potatoes first before mashing them. Why? Just to reduce the water content of the boiled potatoes. The mashed potatoes then mixed with other ingredient and shaped like a ball. OK, let’s enjoy My Potato Croquettes Recipe.

Potato Croquettes

(English Version)

Ingredient :
1 kg potatoes, peeled
3 tablespoons milk powder
2 medium carrots, cut into small pieces
2 tablespoons wheat flour
2 eggs
2 tablespoons margarine
3 tablespoons minced yellow onion
1 tablespoons minced onion
salt, sugar, ground pepper to taste
beaten egg and breadcrumbs

Direction:
1. Boil the potatoes until fork tender. Drain well and let it cool.
2. Fry the potatoes for a while to reduce the water content.
3. Mash the potatoes.
4. Saute the yellow onion and onion in melted margarine until lightly browned.
5. Add carrots, mashed potatoes, milk powder, wheat flour, eggs, salt, sugar, and ground pepper. Mix well then turn off the stove and let it cool.
6. Grab a handfull of mashed potatoes and shape it like a ball.
7. Dip in the beaten egg, then roll through breadcrumbs.
8. Fry each croquette in shallow oil until brown on all sides.

(Versi Bahasa Indonesia)

Bahan :
1 kg kentang, potong kecil-kecil
3 sdm susu bubuk
2 buah wortel potong kecil2
2 sdm tepung terigu
2 buah telur
2 sdm margarine untuk menumis
1 buah bawang bombay, cincang
2 siung bawang putih, cincang
garam, gula pasir, merica secukupnya
1 butir telur, kocok dan tepung roti untuk pelapis

Cara Memasak :
1. Rebus kentang sampai empuk
2. Goreng kentang sebentar untuk mengurangi kadar air (biar kalo pas udah jadi ga pecah saat digoreng)
3. Tumbuk kentang sampai halus
4. Tumis bawang bombay dan bawang putih dengan margarine.
5. Masukan wortel goreng sebentar
6. Masukkan kentang tumbuk, aduk sampai rata
7. Masukkan susu bubuk, telur, tepung terigu, garam, gula pasir, dan merica bubuk, aduk sampai rata
8. Matikan api. Biarkan agak dingin, bentuk bulat-bulat, masukkan ke telur dan tepung roti.
9. Goreng dengan minyak panas, sisanya bisa disimpan di kulkas
